What Are The Stand-Out Greens?

May 5, 2008

Collards, Beet greens, spinach, romaine, kale and other leafy greens are the stand-out vegetables that are jam-packed with vitamins!  Vitamin A, C, and K, potassium, magnesium, iron, lutein, folate, and phytochemicals.  Plus, it isn’t unusual that the studies on diet and disease give them unusual recognition for lowering the risk of many illnesses.

Greens have a lot going for them.  They keep your bones strong becasue they are loaded with vitamin K.  Vitamin K is important for proper functioning of bone-dependant proteims.  The bone is constantly breaking down and needs rebuilding just as any other part of the body, so it needs those proteins to do the rebuilding.

Leafy greens also do more, the research shows that the women who consumed the most leafy greens had less cognitive decline, or memory.  Could we all use that?  Plus,  men who consumed the most green leafy vegetables, app. 2-3 servings a day, were at 14 percent lower risk for colon cancer than those who only consumed one serving a day.

Below is a list of the stand-outs:

1.  Kale

2.  Spinach

3.  Swiss chard

4.  Collards
