Working Out On The Road!!

So are you planning a little trip this summer or many little trips??? Here are a few tips to incorporate to maximize your healthy lifestyle you have created thus far! It is certainly true that no matter where you travel, with a little research and planning you can develop a plan that will keep you on the mark the time you are away. THEN you can return home feeling more energized then when you left!

1. Make sure you ALWAYS drink water, and avoid sodas. Particularly if you are flying the skies of the world.

2. When you are out at the market, pick up some healthy snacks so you won’t go hungry and grab high fat and high sugar goodies.

3. Make sure you are eating your meals, and not just snacking or going without so you are truly famished and then over indulge.

4. Mentally make up your mind how you will eat when eating out at the local restaurants and you will most likely stick to a very healthy menu!

5. If your accommodations don’t offer a fitness facility, take along an exertube and maybe a jump rope. They are easily stored and they will provide great forms of cardio and strength anywhere.

6. Walk everywhere that you can!! See the local sights on foot, or go for hikes, or even better use the pool and swim laps, in short just keep moving while you explore!!!

7. Don’t forget to bring your exercise gear, meaning shoes and comfortable clothing so there are no excuses.

8. Here is your chance to get some rest too! Take time during the day to relax and rejuvenate!! What a gift you can give yourself!! It is always very critical to reconnect with yourself to assess what your body truly needs.

9. Most importantly, have a wonderful time because getting back to the old grind comes very quickly.

    They are called “Kitchen Sink Cookies” by Ellie Krieger. However, I had to make several modifications for the ones I made, based on ingredients that I had. Here is my version:

    Healthy Antioxidant Cookies (modified Kitchen Sink recipe by Ellie Krieger)
    Emily Harper’s version

    2 tablespoons unsalted butter, softened
    2 tablespoons vegetable oil (because that’s what I had)
    1/3 cup light brown sugar
    1/4 cup applesauce
    1 whole egg
    1 teaspoon vanilla
    1/3 cup whole-wheat flour
    1/3 cup oat flour - I had to modify the flour based on what I had and
    1/3 cup all purpose flour because my dough was too wet, as per the whole egg.
    3/4 cup oatmeal
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
    1/2 dried fruit blend (antioxidant blend from Costco, again because that’s what I had)
    1/2 toasted walnuts (I didn’t have any so I omitted them, but they would be yummy!)
    1/2 cup semisweet chocolate chips
    I used parchment paper instead of cooking spray—easier cleanup, less grease!

    Preheat oven to 375 degrees F.

    Combine butter, oil and brown sugar in the bowl of a stand mixer and mix on high speed, stopping occasionally to scrape down bowl, until mixture is light and fluffy, about 2 minutes. Add applesauce, egg and vanilla and mix to combine. Add flours, oatmeal, salt and cinnamon and mix just until just combined. Add dried fruit, optional nuts, and chocolate and mix to combine.

    Line a baking sheet with parchment paper. Using 1 tablespoon cookie dough at a time, roll into balls and place 2-inches apart on baking sheet. Press cookies down with the palm of your hand to flatten slightly, as cookies will not spread as much as cookies with more butter. Bake for 12 to 14 minutes, or until lightly browned but still soft. Remove from oven and cool on racks.

    Yield: My yield was 12 small and 12 medium cookies. If you make them medium size you’ll get more like the 18-20 that the original recipe yields.
